I heard about Birch pancake mix recently and decided to read up on it to see if it was worth the hype. I’ve been making my own banana pancakes recently, which you can read about in my post here, so I wasn’t sure I really needed pre-made pancake mix in my life.

That is…until I read up on Birch.

Technically, the name is Birch Benders and they offer several different flavors, but the one I go for is their Paleo version. The reason I love it so much is because of the ingredients, the nutrients annnnd the fluffiness of these delicious treats.

That’s the one thing that I don’t necessarily love about my homemade ones is that they lack that fluffiness, but these certainly don’t.

Two servings of these pancakes, which amounts to about four small pancakes, has 12 grams of protein and less than 1 gram of sugar, which is what I like to see! Sometimes I’ll even blend in a banana for extra flavor and deliciousness. And all you have to do to make these is combine the mix with water and pour the mix into a pan like normal!

Now for the syrup. That’s where most of the sugar comes into play and I loooove syrup. However, I’ve recently started making The Skinny Confidential’s syrup recipe, which includes minimal syrup and lots of berries. All you have to do is pour a couple tablespoons of maple syrup into a pot over low to medium heat, add in some frozen (or fresh!) berries and heat until the berries fall apart into the syrup for a delicious compote. Pour this compote over your pancakes and bon appetit!
