I know we’ve all heard about two-ingredient pancakes, but they’re too good to ignore. And they can be spiced up super easily. So let’s dive right in. Healthy, simple, delicious, sweet. What more could you ask for?

What you’ll need:

1 banana

2 eggs

Splash of unsweetened vanilla almond milk

1 tablespoon of chia seeds

1 scoop collagen powder (not vital to the recipe, but really good for you!)

½ cup quick oats

Maple syrup

Directions:

  1. Put all the ingredients in a blender (not the maple syrup) and blend until combined.
  2. Put your pan over medium heat and throw in some coconut oil to create a nonstick base for the pancakes.
  3. After the pan heats, pour in some batter (pancake size) and let it sit for a good while before flipping it.

I’ve found that the pancakes that are made later in the batch are better and stronger than the first ones, so just be aware of that when your first few pancakes seem to be falling apart.

Once you’re all done. Sauce the pancakes up with a dusting of powdered sugar (if you please), a drizzle of maple syrup and voila! A healthy and delicious breakfast made easy.
